Rabbie is Scotland’s favourite son; Robert Burns is widely regarded as the national poet of Scotland. Every year on the 25th January the Scots celebrate not only the birthday but also the life and poetry of the poet Robert Burns.

The celebration is also known as the Burns supper, Robert Burns Day or Burns Night. These suppers typically include Haggis, Scotch Whisky and the recitation of Burns' poetry. One of the most famous poems is the Address to a haggis.

Haggis is a dish containing sheep's 'pluck' (heart, liver and lungs), minced with onion, oatmeal, suet, spices, and salt, mixed with stock, and traditionally simmered in the animal's stomach for approximately three hours. Most modern commercial haggis is prepared in a casing rather than an actual stomach. Haggis is traditionally served with "neeps and tatties” and a "dram"
